Cucumber Tomato Feta Salad

IMG_2820Summer is FINALLY here!! That’s right, ladies and gents, the Pacific Northwest finally has consistent sunshine! With the change of the weather, comes the change of the taste buds. I trade my warming winter ratatouille  and warming  cast-iron portions of delicious steaming cassoulet for the lighter summer fare like the Cilantro Lime Chicken & Baked Potato Skins I made for dinner TWO nights in a row (yes, they are THAT good and SO simple).

This year I needed a new salad, something that was out of my normal cooking pallet. I’ve had different variations of this type of salad (Fez on Wheels Turkish Shepherd Salad, and Tom Douglas’ Home Remedy Jackie’s Greek Salad are two of my favorites) and decided it was time to make it myself.

Of course, after I used the “wing it” approach I realized that looking for a recipe could have been smart idea. Psh, who needs a recipe when you have a photo of the ingredients and taste testing! Next time I WONT forget the mint or the fresh lemon juice. The Epicruious version called for scallions instead of the red pepper and the Simply Recipes version called for 1 tsp fresh chopped oregano.  There is also a more italian style version that A Taste of Home posted with mozzarella that I’ll be trying next week! Whatever the variations you use,  it’s even better than next day once the flavors marinate together for a while. Also makes a great potluck or BBQ side!

2 tbsp red wine vinegar
1/4 c fresh squeezed lemon juice
fresh cracked salt and pepper to taste
drizzle of EVOO (extra virgin olive oil)
2 large cucumbers, peeled and seeded
cherry tomatoes (to taste), washed and halved
1/2 c chopped fresh mint, Chiffonade
7 oz fresh sheep feta, crumbled
1 cup pitted halved Kalamata olives

To make the dressing, mix the red wine vinegar, lemon juice, cracked pepper and drizzle of EVOO to a small bowl and whisk together then set aside. If you have a jar, you can also just add the ingredients and shake the living heck out of the ingredients to mix. Wash and half the cucumbers, then use a spoon to scoop out the seeds in the center then slice and place in a medium bowl. Add olives. Wash and half the tomatoes and add them to the cucumber bowl. Rinse and pat the mint dry, then  Chiffonade it. That’s a fancy little french term for stacking herb leaves on top of each other than tightly rolling them and cutting horizontally to produce long thin strips. Add the dressing to the cucumber bowl and toss lightly, sprinkling in the feta and tossing all the goodness together. Serve as a main with some humus and pita bread, or as a delicious side!

Breakfast Sandwiches & Snooze Buttons

I love breakfast, a good cup of coffee and sleep. What’s wrong with that equation? They don’t always belong in the same sentence. The snooze button is my best friend. Which, means I wind up eating the same thing for breakfast EVERY morning because opening a yogurt and making a slice of toast is quick! But, BORING! Especially for someone who actually enjoys cooking.

Life is too short to be boring and breakfast is a very important meal! It sets the tone for your whole day, gives you the energy you need, gets your metabolism going, and reduces hunger throughout the day.

There is more than a bowl of cereal or yogurt for breakfast! Put down the McBreakfast, refrain from that high-sugar muffin staring through the pastry case and yes…that Starbucks breakfast sandwich can’t compare! Making breakfast can be fast, simple AND cost effective! You’ll get your snooze button, save money and eat healthier! Have I addressed all of your excuses yet?

English Muffin w/ Tomato, Spinach, Egg, Cheese & Avocado

I love a good breakfast sandwich! Homemade breakfast sandwiches are typically healthier for you and are made fresh in your very own kitchen, with real ingredients instead of assembled, frozen and re-heated. Fresh food always tastes better!

So, I decided a little planning ahead needed to happen so I could have it all: the snooze button AND a delicious quick breakfast sandwich! I promise, they’re simple and delicious! Give it a try see how much more delicious breakfast can be!

Breakfast Sandwiches
1 English Muffin
1-2 Eggs
Avocado
Heirloom tomato slice
Avocado

  • While your egg pan heats (over medium heat), slice your tomato and avocado and get out any other toppings or spreads you’ll use. Split the English muffin and place in toasted, but don’t toast yet.
  • (Go about your morning routine while the pan heats)
  • Once the pan is warm (hover your hand over the pan and you should feel the heat), scramble the eggs into your pre-heated pan and stir so that they get all cooked.
  • Push down your English muffin and spread your avocado once it’s toasted then assemble the rest of your sandwich (veggies, spread, herbs, etc) and decide if you want your cheese melted on your eggs or right on the English muffin.
  • Place the eggs on top of your prepared masterpiece and enjoy!!

See!? Swift, simple and delicious as promised! Enjoy a wonderful breakfast at home, saving money and eating healthier!

Even the best egg sandwich can get boring so I wanted to include a few other ideas for those who want to mix it up or might not be thrilled with English Muffins!

Breakfast Sandwich Variations:

  • Carb: crumpet, whole wheat wrap, corn or flour tortilla, pita, slice of toast or rustic bread
  • Protein: eggs, tofu, cheese (feta, mozzarella, cheddar), dairy-free cheese (my favorite that actually melts is Galaxy Mozzarella (review here),  turkey or Canadian bacon, ham
  • Veggies: spinach, arugula, tomato, roasted peppers, sun dried tomato
  • Spread: avocado, pesto, Dijon, Cholula
  • Herbs: basil, cilantro, or parsley (fresh is best but dried is great and can be mixed into eggs, tofu, spreads, etc)

Roasted Fennel Pasta with Tomato Dressing

I don’t make New Year’s resolutions, because if I did then my number one AND two would have been broken for the past few YEARS: cook through my recipes and cook with more diverse foods! Thanks to Presidents Day, a little holiday afforded me the time and the inspiration to try TWO new recipes! Something possessed me to pick up fennel at the market this week and while I can’t remember actually consciously eating fennel up to now something in me decided that we needed to cook it!

Keeping with the homemade and new recipes theme, I found a delicious tomato dressing/compote recipe  Martha Stewart.com (link below) and what was it drizzled over? That’s right…fennel. It was a sign from the cooking gods! Below I’ve worked in both recipes into the overall preparation of the meal but will have links to the specific recipes below.  The recipe below served 3 people healthy portions but there was only leftover pasta. If you want leftovers to enjoy I suggest doubling the fennel and sauce portion of the meal.

This meal is Meat-free, dairy-free (if you omit the Parmesan like I do) AND Vegan; if you use gluten-free bread & pasta it’s also a gluten-free option as well! Look at the endless possibilities!

 

 

Ingredients

Pasta

  • 1/2 package pasta of your choice ( I used Angel Hair)

Garlic Bread

  • Whatever rustic loaf you like
  • Optional- Parmesan or Dairy Free Cheese for the garlic bread.We love the grated blend  Parmesan from DeLaurenti that we pick up fresh from Pike Place

Roasted Fennel

  • 3 fennel bulbs (choose with thick base), stalks cut off, bulbs sliced
  • EVOO (extra virgin olive oil)

Tomato Dressing:

  • EVOO (extra virgin olive oil)
  • 10 ounces (1-pint container) grape or cherry tomatoes
  • minced garlic (to taste in all recipes, I don’t measure much!)
  • 2/3 cup dry red wine
  • 1/4 cup balsamic vinegar
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 teaspoon red-wine vinegar

  1. Pre-heat oven to 400°F.
  2. Chop top of fennel stock off, wash bulb and cut as shown below. (Note, the lovely photography is from the Simply Recipes site, I didn’t remember to take a photo of this step). You can wash your tomatoes at this time also if you’d like.
  3. Lay out baking sheet with aluminum foil over it. Toss the fennel in olive oil. This time I used a bowl to coat, which resulted in a bit too much olive oil on the fennel, next time I suggest laying out on a baking sheet and brushing with an OXO Basting Brush.
  4. Crack fresh pepper over fennel and drizzle with balsamic vinegar.
  5. Roast for 30-40 minutes, until fennel is caramelized.
  6. Prep the garlic bread on aluminum foil so it’s ready to put in the oven! I use my handy dandy Misto Sprayer and spray some EVOO over the bread, drizzle with minced garlic, fresh cracked pepper, and dried parsley. If you’re doing cheese (Being lactose intolerant I don’t use the cheese but it’s still quite delicious!)  add the cheese on the top.
  7. When fennel has about 25 minutes left start the water to  boil the water for the spaghetti. Add the spaghetti when the water boils and cook to your desired tenderness.
  8. In a medium pan, drizzle olive oil for the tomato dressing over medium heat. Add the tomatoes when the pan is hot. Make sure you keep swirling the pan around so that all the skins have a chance to cook.
  9. Add the garlic, red wine, and balsamic vinegar to the dressing pan, mixing well. Simmer until the liquid reduces and tomatoes start to get soft (about 5 minutes). At this step I cut the tomatoes in half with my spatula to allow the juices to mix.
  10. Stir in sugar, salt, and red-wine vinegar, and cook for 1 minute.
  11. When there is 10 minutes left on the fennel timer, stick the bread in the oven to toast and the cheese has melted.
  12. Serve and enjoy a culinary masterpiece!!

My overall review:  I think this is one of the best meals I’ve ever made!! The savory grilled and caramelized flavor complimented the liquorice taste of the fennel blended, which perfectly with the tomato balsamic sauce and the texture of the pasta. Add some grilled potato garlic bread and it was simple divine!!!
