Quinoa Veggie “Fried Rice”

The joy that I get from the last bit of toothpaste used up, or taking the last olive of the jar, or finishing a pen….okay that last one is quite a feat ADMIT it… but I digress! The female + Type A + Project Manager/List Lover in me LOVES to feel that sense of completion. Once something is opened in our house it immediately goes into that awkward “use me up” stage and has a bullseye on it. So, the half used bag of quinoa was starting to get on my nerves. Seriously, it was taunting me EVERY time I opened the pantry cabinet and I’d had enough of being laughed at by Quinoa!

Don’t worry, I’m not crazy. The quinoa didn’t actually laugh at me. But I vowed to incorporate into more meals because we both LOVE it and it’s quite the superfood! The mister taught me an amazing trick that makes the quinoa taste AMAZING! Have you ever tried toasting it first!? Serious, life meet changed! Well, I just have a little extra time on my hands these days So I decided to take up my reoccurring vow to cook through at least a FEW of my million recipes I’ve carefully drooled over and curated on my Pinterest boards. One of the dishes I REALLY wanted to try was for Quinoa Veggie “fried rice”. The mister has commented a few times that he REALLY likes fried rice while I’m not a big “rice” fan, BUT we both love quinoa. I found an AMAZING looking picture on Pinterest, pulled that quinoa out of the pantry and away I went!

I adapted the recipe since I prefer to use recipes as guidelines and then just change it up and see what happens and it was delicious!!

photo 2Quinoa Veggie “Fried Rice”:

Recipe adapted from Dam Delicious Blog Post
Yields 4-6 servings

INGREDIENTS:

  • EVOO
  • 4 eggs
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 4-5 large mushrooms, sliced (or to taste if you’d like more)
  • 1 head broccoli, cut into florets
  • 1 zucchini, chopped
  • 1 can corn
  • 1 large carrot, peeled and finely chopped
  • 2 cups toasted cooked quinoa (recipe for toasted quinoa here)
  • soy sauce (to taste)
  • 3 green onions, sliced
  • Baby Bok Choy, base cut off so leaves are free, amount to taste

DIRECTIONS:

  1. Heat dash of EVOO (extra virgin olive oil) in a  Wok (or medium skillet) over low heat. Add garlic and onion, and cook, stirring often, until onions become translucent, about 4-5 minutes.
  2. In the mean time, start the quinoa  (full recipe here). Short recipe: Toast quinoa until it starts to pop, like popcorn and the outer shells turn a light to dark brown. Rinse under cold water and return to pan. Add water (1 cup water for ever half cup dry quinoa) and bring to a boil, continuously stirring. Reduce to a simmer and cover for 10 minutes then “fluff” with a fork or spatula.
  3. Add mushrooms, broccoli and zucchini. Cook, stirring constantly, until vegetables are tender. Add a bit of water and soy sauce, cover with large lid and let steam for 5-7 minutes.
  4. Add corn, carrots and quinoa. Cook, stirring constantly, until tender.
  5. Push all veggies to one side of the Wok and crack the eggs into the hotter side of the pan and “beat” in the pan, turning once cooked on the bottom. Mix into the veggies and combine all the goodness.
  6. Stir in green onions and bok choy.
  7. Add quinoa, mix thoroughly and let heat for 3-5 minutes.

Options:

  • Cook eggs in Wok or Skillet first- fry until cooked through, about 2-3 minutes per side, flipping only once. Let cool before dicing into small pieces and add with the green onions at the end
  • Use 1/2 cup corn and half cup peas
  • Include fresh ginger
  • Grate carrots instead of chop them
  • Omit the Boc Choy
  • Make a sauce for the dish and drizzle it over the cooked veggies at the end

Breakfast Sandwiches & Snooze Buttons

I love breakfast, a good cup of coffee and sleep. What’s wrong with that equation? They don’t always belong in the same sentence. The snooze button is my best friend. Which, means I wind up eating the same thing for breakfast EVERY morning because opening a yogurt and making a slice of toast is quick! But, BORING! Especially for someone who actually enjoys cooking.

Life is too short to be boring and breakfast is a very important meal! It sets the tone for your whole day, gives you the energy you need, gets your metabolism going, and reduces hunger throughout the day.

There is more than a bowl of cereal or yogurt for breakfast! Put down the McBreakfast, refrain from that high-sugar muffin staring through the pastry case and yes…that Starbucks breakfast sandwich can’t compare! Making breakfast can be fast, simple AND cost effective! You’ll get your snooze button, save money and eat healthier! Have I addressed all of your excuses yet?

English Muffin w/ Tomato, Spinach, Egg, Cheese & Avocado

I love a good breakfast sandwich! Homemade breakfast sandwiches are typically healthier for you and are made fresh in your very own kitchen, with real ingredients instead of assembled, frozen and re-heated. Fresh food always tastes better!

So, I decided a little planning ahead needed to happen so I could have it all: the snooze button AND a delicious quick breakfast sandwich! I promise, they’re simple and delicious! Give it a try see how much more delicious breakfast can be!

Breakfast Sandwiches
1 English Muffin
1-2 Eggs
Avocado
Heirloom tomato slice
Avocado

  • While your egg pan heats (over medium heat), slice your tomato and avocado and get out any other toppings or spreads you’ll use. Split the English muffin and place in toasted, but don’t toast yet.
  • (Go about your morning routine while the pan heats)
  • Once the pan is warm (hover your hand over the pan and you should feel the heat), scramble the eggs into your pre-heated pan and stir so that they get all cooked.
  • Push down your English muffin and spread your avocado once it’s toasted then assemble the rest of your sandwich (veggies, spread, herbs, etc) and decide if you want your cheese melted on your eggs or right on the English muffin.
  • Place the eggs on top of your prepared masterpiece and enjoy!!

See!? Swift, simple and delicious as promised! Enjoy a wonderful breakfast at home, saving money and eating healthier!

Even the best egg sandwich can get boring so I wanted to include a few other ideas for those who want to mix it up or might not be thrilled with English Muffins!

Breakfast Sandwich Variations:

  • Carb: crumpet, whole wheat wrap, corn or flour tortilla, pita, slice of toast or rustic bread
  • Protein: eggs, tofu, cheese (feta, mozzarella, cheddar), dairy-free cheese (my favorite that actually melts is Galaxy Mozzarella (review here),  turkey or Canadian bacon, ham
  • Veggies: spinach, arugula, tomato, roasted peppers, sun dried tomato
  • Spread: avocado, pesto, Dijon, Cholula
  • Herbs: basil, cilantro, or parsley (fresh is best but dried is great and can be mixed into eggs, tofu, spreads, etc)

Well, after what seems like weeks away, endless airports, taxis and train, we’re finally home from our two weeks of gallivanting around Spain! The house is buried under piles of laundry to be done, the camera is glaring at me with thousands of pictures to sort and days of e-mail to catch up on, we’re home! Weekend Breakfast: Potato Pancakes, Poached Eggs & Avocado Sauce

Recipes for me serve as general guidelines for inspiration, so this meal is the result of a recipe for avocado sauce and a fridge of leftover ingredients from cilantro lime marinated chicken skewers and homemade potato skins.

It was super easy to make and, as I’ve mentioned in other posts, I LOVE cooking weekend breakfast and brunch! Today’s religious experience was so simple and flavorful! It even got the complement comment  “this is SO good! I feel like I’m on vacation! “… Now that makes a chef happy!

The crispy texture of the pancake mixed with the creamy avocado sauce and the runny egg is just to die for! The lime in the avocado sauce and the spices made for a very refreshing meal. I couldn’t believe how the flavors  and textures mixed. Don’t get me wrong, I knew it would be good but I was actually surprised at how incredibly delicious it was! I regret that I have only one stomach! You can play around with different spices and ingredients, and you might get extra points if you find a way to mix in some tequila! 🙂 Breakfast drink anyone!?

Potato Pancakes, Poached Eggs & Avocado Sauce
a rough step by step guide

Potato Pancake & Poached Eggs Ingredients
Potato
Milk (you can use regular or an alternative)
Cheddar Cheese, grated (regular and/or alternative)
Eggs
Fresh Salt & Cracked Pepper
Cilantro (to garnish, if desired)
Green Onions (to garnish, if desired)
Sour Cream (to garnish, if desired)

Avocado Sauce Ingredients
Avocado
1 lime
Fresh Salt & Cracked Pepper
Cayenne Pepper
Cumin
Garlic, minced
Cilantro

  1. Heat pan for potato pancakes. I swear by my Calphalon Crepe Pan! It heats evenly and the non-stick makes for quick and easy clean up!
  2. Mash together the potato, milk, salt & pepper to taste. Make sure to get it as smooth as you can without any potato lumps. While the potato pan is still heating, chop the green onion, cilantro and grate the cheese.
  3. To make the avocado sauce, mix together all listed ingredients to taste until smooth. Be mindful on the cumin, it’s a strong flavor and can easily overpower the flavors if you’re not careful!
  4. The potato pan should be hot by now, scoop in the potato and carefully flatten and shape into a circle. Cook until crispy on one side and flip. Add the cheese and allow it to melt. Once the cheese is fully melted, move to plate and smear avocado sauce on the top.
  5. Once you flip the pancakes, start the water for the eggs boiling and poach the eggs for 3 minutes. Have a small ramekin handy to drain the water from the eggs. I LOVE the CorningWare Ramekins, they’re so stylish and the perfect size for poached eggs. After 3 minutes, don’t let the eggs overcook, remove the egg with a slotted spoon and rest the spoon over the ramekin to allow the last drops of water to fall. If you don’t do this, the water will soak into the pancake and make it soggy.
  6. Place the poached egg on top of the avocado adorned pancake, and garnish with cilantro, green onion, sour cream, and spices as desired. You can add a little salsa if you wish, I wanted to bring out the flavor of the avocado sauce so we didn’t use it for this breakfast.

 

 

Weekend Breakfast: Eggplant and Scrambled Eggs

I love weekends! What’s better than waking up and realizing that the first of two day’s you’ve been looking forward to all week are finally here!

One of the best parts of the weekend, in our house, is weekend breakfast! During the week, breakfast is a chore and provides quite a bit of entertainment while I bang around opening cabinets and drawers in the attempt to find a suitable meal that can be made quickly or eaten on the go.

But Weekends…walking into the kitchen, opening the fridge and creating some delicious weekend masterpiece is nearly a religious experience for me! Today, however, there was little inspiration flowing so I gave creative powers the day off and opted for my simple “go-to” stand by’s of eggplant and and scrambled eggs.

Not only is this meal gluten-free, dairy-free, paleo, low fat but it’s also incredibly simple and quite delicious!

Eggplant & Scrambled Eggs

  • Pre-heat oven to 450
  • Slice eggplant and lay on baking sheet covered with a sheet of Reynolds Wrap Non-stick aluminum foil 
  • Misto Spray olive oil  on the top of the eggplant and season with fresh cracked pepper
  • Cook for 15-17 minutes, or until eggplant is as cooked/crispy as you like
  • When there is about 5 minutes left on the oven timer, scramble one egg with garlic, cayenne pepper, fresh cracked pepper, dried parsley and cook.
  • Enjoy!!

Today I also tried something that we picked up last week and I haven’t yet tried, Reynolds Wrap Non-stick aluminum foil (also available through My Amazon.com Store). We make broiled veggies 3-5 times a week and no matter how much olive oil I lather on the veggies or Misto spray on foil the eggplant ALWAYS sticks! It drives me nuts and has caused a few choice words to escape on various occasions! So, last week we picked up a roll of the alleged “non-stick” foil and today was the day! I was skeptical as I pulled it out of the drawer mentally recounting the countless fights with the baking sheet and foil as it they tried to hold onto my precious eggplant with their sticky powers.

I am quite happy to report that I’m a believer! Foil CAN be non-stick! Ring the bells, sound the horns! That foil worked wonders and I actually liked that it wasn’t quite flawless, as you can see in the photo the end cut of the eggplant stuck to the sheet a bit. Full dramatically narrated product review posted here. This is now a STAPLE of my modest little kitchen! With the tiny space that we have, every utensil, pot, pan and gadget must earn it’s spot!

 

And on a completely non-related side note… have you ever tried to spell  “utensil” and gotten it right the first time!? I’ll shamelessly admit that it took me a few tries… what a strange word!
