Santa Fe Salad
ingredients
- 5 c spinach leaves
- 1 1/4 c frozen corn
- 1 1/4 c black beans
- 1/8 c red onion, minced
- 1/4 c bell pepper, diced
- 1/2 c cheddar cheese
- 15 corn chips
- 1/2 of 1/3 cup olive oil
- 1/2 of 1/3 cup red wine vinegar
- 1 Tbsp cilantro
- 1/2 tsp salt
- 1/4 tsp pepper
directions
- wash, drain, spinach
- blanch corn for 1-2 minutes in boiling water, drain and chill
- rinse and drain beans
- in large bowl, combine corn, beans, onion, and bell pepper
- pour dessing over veggies. mix and chill well
